The perfect way to use up roast chicken leftover. Make a simple dressing and add crunchy vegetables to turn slices of chicken into salad.

Instructions
Measure the lemon juice and fish sauce.
Prepare the aromatics, meat and vegetables.
In a medium-size bowl, combine the lemon juice, fish sauce, sugar, chili, garlic and shallots.
Add in the chicken, cabbage and tomatoes.
Mix to coat the meat and vegetables with the dressing.
Sprinkle coriander and serve.
