Easy tomato and avocado with feta salad is not only tasty but only takes a few minutes to make with so few ingredients.

- 1 small avocado just ripe
- 1 medium tomato or 1 cup cherry tomatoes, sliced
- 1/4 cup feta cheese crumbled or cubed
- 1 tsp lemon juice
- 3 tsp extra virgin olive oil
- black pepper freshly ground, to taste
Slice the avocado in half, deseed, cut lengthwise without piercing the skin and scoop the flesh out. Set aside.
Slice the tomato or tomatoes. Set aside.
Assemble the fruit on a plate, arrange the avocado slices on the plate and top with the tomato slices.
Add the feta cheese.
Squeeze the lemon juice over the top.
Drizzle with olive oil.
Season with black pepper to taste.
Add sliced onion or herbs like basil or mint. Serve.
The recipe is for two but adjust the amount of ingredients according to preference.
Remember the 3 to 1 ratio of oil to acid.
Replace lemon juice with lime juice or balsamic vinegar.
Replace feta with cottage cheese, pan-fried halloumi or paneer but add salt to taste.
