BROCCOLI AND CARROTS PASTA

Broccoli and carrots pasta is super easy to make, filling and tasty. Get ready to make a super easy pasta dish. Fusilli cooked Al dente, blanched broccoli and carrots, drizzled with olive oil, topped with grated parmesan and freshly cracked black pepper. Mix all the ingredients gently and enjoy.

Equipment

  • 1 saucepan
  • 1 sieve
  • 1 slotted spoon
  • 1 mixing bowl
  • 1 mixing spoon

Ingredients
  

  • 1 cup fusilli
  • 1/4 cup carrots chopped
  • 1/2 cup broccoli chopped
  • 1/4 cup olive oil
  • 1/4 cup parmesan cheese grated
  • pepper to taste
  • salt to salt the boiling water
  • water for boiling

Instructions
 

  • Bring a pot of salted water to a boil.
  • Blanch broccoli and pasta for two minutes. Take the vegetables out and plunge them into a bowl of cold water. Drain the vegetables out of the cold water in a sieve. Set aside.
  • Using the same water to boil the vegetables, add the pasta and boil until al dente. Drain the pasta and rinse with cold water.
  • Add the vegetables and pasta to a mixing bowl. Drizzle olive oil, grate parmesan over the top and season with pepper. Toss gently and evenly.
  • Taste the dish and adjust the seasoning as required. Serve straight away or chill for an hour before serving.
