This is a nostalgic dish for me. A bite brings me back to my childhood when my mom would make it when tomatoes were in season.
The dish was a nice change for breakfast after we had had fried, boiled or omelette. The addition of tomatoes to the usual scrambled eggs made it special as it added a sharp sweetness to the eggs.
As a child, I could not appreciate it as much as I do now as an adult. Now I mainly make scrambled eggs with tomatoes for myself and occasionally share them with my daughter when she wants a bite.

Making scrambled eggs with tomatoes is simple. It involves scrambling the eggs and stir-frying the tomatoes. Then simply add the scrambled egg back into the pan. This method makes moist and fluffy eggs and the tomato flavor makes the dish even more delicious.
Ingredients
This dish is made with ingredients you more likely already have on hand, eggs, tomatoes, oil, salt and pepper, it is perfect for times when you don’t want to run to the shops but still want something good.
Since it only calls for a handful of ingredients, if possible go for good quality, fresh ingredients you can find.
Eggs – use fresh eggs, I used free range eggs in this recipe
Tomatoes – use ripe tomatoes for maximum flavour. Any tomato variety will work but remember to use ripe tomatoes for their sweetness and depth of flavour.
Salt and pepper – season well with salt and pepper
Cooking oil – use neutral cooking oil
How to make scrambled eggs with tomatoes
1. Whisk the eggs until smooth. Stir in salt and pepper and set aside.
2. Prepare the tomatoes. Slice cherry tomatoes in halves or chop medium tomatoes in quarters.
3. Heat a pan on medium heat. Add some oil and pour the whisked eggs. Scramble until the desired doneness. Scoop out of the pan and set aside.
4. Bring the same pan back to medium heat and then add some oil.
5. Add the tomatoes. Cook until the tomatoes are soft and add the scrambled egg back into the pan.
6. Fold the egg and tomatoes until just combined.
7. Immediately transfer to a serving plate. Serve with a warm bowl of rice and enjoy.

Ingredients
- 2 large eggs
- handful cherry tomatoes or 2 medium tomatoes
- salt and pepper to taste
- 1 tbsp neutral cooking oil
Instructions
- Whisk the eggs until smooth. Stir in salt and pepper and set aside.
- Prepare the tomatoes. Slice the tomatoes in halves.
