GINGER SCALLION SAUCE

Here is a simple ginger and scallion sauce recipe. Savoury, easy to make and ready in 10 minutes. Serve over chicken rice, steamed fish, roast pork, tofu, eggs, noodles, stir-fries and a bowl of plain rice. It will make everything taste awesome.

A sauce or condiment traditionally served with plain boiled chicken.

This is meant to make plain boiled chicken delicious and everything tastes delicious like plain boiled rice, fried egg, steamed fish, steamed tofu or roast pork.

This is one of the sauces that makes everything better.

Zesty ginger and sweet scallion with nutty sesame oil and salty flavours all create a mouthwatering condiment.

I did not grow up with ginger and scallion sauce. I picked it up from seeing other places like other parts of Southeast and East Asia.

The first sauce I knew made things better before being introduced to prik nam pla from Thailand and ginger scallion sauce from South China is soy sauce and vinegar dipping sauce which is still a star.

But having said that my husband who has travelled and has a more refined palate, approves of this ginger scallion sauce. 

Ingredients

Scallion – also called spring onion and green onion. This recipe used mainly the white part of the onion because it has more flavor than the green part. The green part of the green onion is used in stir-fries and soups.

Ginger – mature ginger is used in this recipe, peel the ginger if store-bought but if homegrown I do not peel it.

Neutral oil – use any neutral oil available on hand

Salt – I use table salt because that is what I normally have at home, if using other types of salt  make sure the oil is seasoned enough and to taste and adjust

Sesame oil – toasted sesame oil is preferred

How to make ginger scallion sauce?

I normally use a knife and chopping board but feel free to use a food processor to mince your ginger and spring onion to save time. 

This recipe cooks the ginger and scallion to take their rawness out which in my experience cannot be achieved by pouring hot oil on them.

Finely mince the green part of the spring onion. Peel the ginger and mince. Place the spring onion or scallion and ginger in separate plates or bowls.

Heat a pan on high. Pour the oil into the pan. Add in the ginger and cook for around 15 seconds. Stir constantly.

Add in the scallion and cook for 15 to 20 seconds. Turn the heat off. Transfer the cooked ginger and scallion to a bowl.

Sprinkle the salt and drizzle the sesame oil over.

Have a taste and adjust the seasoning. Serve and enjoy.

Traditionally served with poached chicken it also goes well and makes steamed tofu, meat, fish, roast meat, stir-fries, vegetables and plain boiled rice delicious.

Ingredients
  

  • 2 tbsps scallion spring onion or green onion, minced
  • 1 tbsp ginger minced
  • 5 tbsps neutral oil
  • 3 tsp salt
  • 1 tbsp sesame oil toasted

Instructions
 

  • Mince the white part of the scallion.
  • Peel and mince the ginger.
  • Heat pan on high and add oil.
  • Add the minced ginger and cook for 15 seconds.
  • Add the minced scallion and cook for 15 to 20 seconds.
  • Turn the heat off. Pour the ginger and scallion in a bowl.
  • Season with salt and sesame oil. Serve and enjoy.
