ENSALADANG LABANOS (VEGAN RADISH SALAD)

This Filipino radish salad also called ensaladang labanos is incredibly simple to prepare that you’d make it again and again.

What is Ensaladang Labanos?

In Filipino ensalada means salad and labanos is radish.

The connective ‘ng’ is added to ensalada to connect it with the next word labanos which means radish salad.

Ensaladang labanos is a side dish which is usually served with grilled or smoked fish and fried dishes. I enjoy this side dish with fried fish because it cleanses the palate before taking another bite of fish.

Serve it alongside battered fish and you’d be surprised with the good combination.

Mamon likes to eat fresh vegetables and this one is a hit.

She cannot eat too much chili yet so I added ground black pepper for heat.

When I chop chilis I cut them to a size that could be easily identified and take out. We do not want anyone to accidentally chew them!

Ingredients

Radish is widely available in supermarkets in the UK. For this salad, I used daikon or mooli for this recipe which I bought from the Asian shop.

When shopping for radishes, pick the firm ones that also look juicy in the inside.

In the summer when homegrown radishes are plenty I prefer those ones as they are full of flavour and fresher.

As for the dressing, white wine vinegar or cider vinegar is my go to. I used vinegar because they are already in my kitchen.

But if I were in the Philippines I would have used citrus juice and fish sauce for my dressing.

I felt that the salt from pickling the radish was enough to not add salt with the vinegar.

When you make it please give it a try and season to your liking.

Other ingredients which add more flavour to this dish include garlic, ginger, tomatoes, chili and onions.

One extra thing to do with the radish is to pickle the strips with salt for half an hour then squeeze as much water out. This will make the radish crunchier.

How to make ensaladang labanos?

To make this dish, cut the radish into strips, sprinkle with salt, stir well and set aside.

Leave to pickle for 30 minutes.

Meanwhile, mince the garlic, onion and ginger and set aside. Chop the tomato. Measure the vinegar, soy sauce and seasoning.

After 30 minutes, squeeze as much water out of the radish.

Put all ingredients in a bowl, toss well, give it a taste and it is ready to plate.

Ingredients
  

  • 200 grams daikon
  • 1 teaspoon salt
  • 1 small small onion chopped
  • 1 clove garlic minced
  • 1/2 teaspoon ginger minced
  • 1 small tomato chopped
  • 1 tablespoon cider vinegar
  • 1 small red chili pepper
  • pepper to taste

Instructions
 

  • Cut the daikon into strips. Put in a bowl, sprinkle with salt, combine and set aside for 30 minutes.
  • Mince the garlic and ginger. Chop the tomatoes, onion and chili.
  • After half an hour, squeeze the water out of the radish. Discard the water.
  • In a clean bowl, combine all the ingredients. Toss well and taste.
  • Optional: top with chopped spring onion before serving.

  • Pickle the daikon for half an hour and squeeze as much water out of it. This will help make the radish become crunchy.
