Easy Tomato and Avocado with Feta Salad

Easy tomato and avocado with feta salad is not only tasty but only takes a few minutes to make with so few ingredients.

Homemade salad is so easy to make that you might want to say goodbye to prepared ones.

This tomato and avocado with feta salad only takes minutes to put together yet flavorful and filling. 

It is a great precursor to a meal or could be a meal and snack.

Enjoy during the summer months when tomatoes are aplenty. Although avocadoes and tomatoes are available year-round, they are more flavorful in season.

I prepare this salad with feta because I like the addition of creamy, briny feta. However, as my husband cannot eat dairy he has a plate without the feta. Everyone’s happy.

Recipe Ingredients

The only thing to remember about the ingredients is the oil-to-acid ratio which is 3 parts oil to 1 part acid. 

Tomato – use fresh medium tomato or cherry tomatoes of any colour 

Avocado – choose a firm, just ripe avocadoes otherwise the salad will end up with a mushy texture

Feta cheese – it is preferred for its crumbly texture, use hands or tines of a fork to break feta into pieces. Substitute with cottage cheese or pan-fried halloumi or paneer. If using halloumi or paneer add salt to taste

Lemon juice or lime juice or balsamic vinegar for the acid

Extra virgin olive oil

Freshly ground black pepper – season to taste

Add fresh salad onion for crunch.

Throw in hand-torn basil or mint for added herb freshness.

How to make tomato and avocado with feta salad

Prepare the avocado

1. Cut the avocado in half lengthwise. Cut down to the seed and all the way around.

2. Next, gently twist the avocado halves apart. Remove the seed.

3. Cut lengthwise without piercing the skin, for longer pieces, Scoop the flesh out with a spoon.

4. Place the avocado slices on the plate.

Prepare the tomato/tomatoes

1. Place the tomato on its side, with the top facing to the right. 

2. Cut the tomato into thin parallel slices from top to bottom. 

If using cherry tomatoes, slice them in half and they are ready.

Make the salad

1. Place the avocado slices on a plate, layer with tomato slices on top then crumble feta cheese over.

2. Squeeze the lemon juice over the fruit and cheese.

3. Drizzle with olive oil.

4. Sprinkle with ground black pepper.

5. Serve immediately. Enjoy!

Ingredients
  

  • 1 small avocado just ripe
  • 1 medium tomato or 1 cup cherry tomatoes, sliced
  • 1/4 cup feta cheese crumbled or cubed
  • 1 tsp lemon juice
  • 3 tsp extra virgin olive oil
  • black pepper freshly ground, to taste

Instructions
 

  • Slice the avocado in half, deseed, cut lengthwise without piercing the skin and scoop the flesh out. Set aside.
  • Slice the tomato or tomatoes. Set aside.
  • Assemble the fruit on a plate, arrange the avocado slices on the plate and top with the tomato slices.
  • Add the feta cheese.
  • Squeeze the lemon juice over the top.
  • Drizzle with olive oil.
  • Season with black pepper to taste.
  • Add sliced onion or herbs like basil or mint. Serve.

Notes

The recipe is for two but adjust the amount of ingredients according to preference.
Remember the 3 to 1 ratio of oil to acid.
Replace lemon juice with lime juice or balsamic vinegar.
Replace feta with cottage cheese, pan-fried halloumi or paneer but add salt to taste.
