Eton Mess is a decadent and refreshing summer treat. This Eton mess recipe brings together tangy Greek yogurt, strawberries in season and crunchy meringue nests.

This 3-ingredient, gluten-free dessert is best made with fresh strawberries, tangy but smooth yogurt with the added crisp, airy meringue.

A delightful and bright dessert that was said to have originated in Eton College.

 This dessert or British pudding was served at the annual cricket match with Harrow.

My daughter made a more traditional Eton mess and has a video of how she made it.

She would happily make this pudding during strawberry season or when she has strawberries left in a punnet.

How she loves to munch on fresh fruit! Do your kids like fresh fruit too?

I remember my father in law used to mash up strawberries and cream which thinking about it now is pretty much Eton mess.

As for me, I prefer the yogurt to the cream with with fresh strawberries

And my mother in law prepared something similar with bananas and superfast Mornflakes.

I add leftover bananas with mine occasionally which makes the dessert heartier.

As Nigella said, this is a mixture of white from the cream, juicy red of the strawberry and rivulets of pink.

Ingredients

Greek yogurt – I used full-fat Greek yogurt to make this dessert as I prefer it to the low-fat yogurt. Feel free to use the low-fat or zero-fat yogurt and even plant-based yogurt.

Strawberries – in-season strawberries are preferred for the sweetness, this way we would not need to add sugar

Meringue nests– store-bought meringue nests were used in the recipe. If time permits, homemade meringues will be great.

How to make Eton Mess?

In a medium bowl, place two spoonfuls of Greek yogurt. Stir the yogurt to aerate so that it will not be too stiff.

Crumble in the meringue.

Add the chopped fresh strawberries.

Gently mix the ingredients together. 

Scoop the mixture into a glass.

Top with more strawberries. Serve.

Eton mess is a traditional English dessert consist of whipped cream, chopped strawberries and broken pieces of meringue.

There are a number of stories relating fo the origin of this treat and I love how Runnymede Hotel put it together.They also their twist on the dessert.

How to serve Eton Mess?

Serve on a platter or individual glasses.

Can I do a mix strawberries and raspberries to make Eton Mess?

Absolutely, yes. Use a mix of strawberries and raspberries. And if both fruits are not available banana and soft fruit work well too.

Can I make this vegan-friendly?

I would like to try this pudding with plant-based yogurt and vegan meringue to make it vegan-friendly but I haven’t seen vegan meringues yet so that has to wait.

Storage and leftovers

Eton mess is best served straight away once assembled. It is because the meringue tends to soften the longer it sits with the strawberries and cream. 

When served right after it is made, you will be able to enjoy the crisp, airy texture of the meringue that you bite into.

Ingredients
