Do you sometimes accidentally buy a big chicken, roast it, serve and wonder what can you do with the leftovers?

Don’t we all do that?

I hear you make soups or sandwiches and those bones would go in a big pot to boil for stock.

This chicken salad recipe guarantees to wake up your senses when mixed with leftover meats not only chicken but also turkey and steak.

Serve alongside steamed rice, sticky rice, toast, fresh or steamed vegetables for a complete meal.

Ingredients in chicken salad

  • lemon juice
  • fish sauce
  • sugar
  • chili
  • garlic
  • shallots
  • chicken
  • cabbage
  • tomatoes
  • coriander

How to make chicken salad

This is basically a chop the chicken and vegetables, measure the juice and sauce then mix them all together in a bowl. Make sure to taste and adjust the seasoning and the salad is ready.

Substitutions

  1. If you can’t find shallots, slice red or brown onion thinly.
  2. Use soy sauce in place of fish sauce.
  3. Poached chicken, roast beef or turkey will work great too.

Ingredients
  

  • 1 tbsp lemon juice
  • 1 tbsp fish sauce
  • 1/2 t sugar
  • 1 t garlic, minced
  • 50 g chicken
  • 50 g tomato, sliced
  • 1 pc chili, sliced
  • 2 pcs shallots, sliced
  • 1/2 c cabbage, chopped
  • coriander

Instructions
 

  • Measure the lemon juice and fish sauce.
  • Prepare the aromatics, meat and vegetables.
  • In a medium-size bowl, combine the lemon juice, fish sauce, sugar, chili, garlic and shallots.
  • Add in the chicken, cabbage and tomatoes.
  • Mix to coat the meat and vegetables with the dressing.
  • Sprinkle coriander and serve.
