My mother-in-law used to make this banana pudding often. I remember her saying how she made it so I gave it a try and was hooked.
Although she had it for dessert which I initially did too, I quickly prepared it for breakfast or snack whenever there were overripe bananas waiting to be eaten. She used to make banana and oatmeal pudding with milk and plenty of nuts. Then serve the pudding straight away or make it before lunch.
One thing to remember when you eat this pudding is to drink lots of water. That being said, let’s get the ingredients ready and make a bowl of pudding.
Ingredients and Substitutions
Banana – Use ripe bananas for their sweetness and ease of mashing.
Instant or superfast oats – I use instant oats for ease and this way the oats do not need to be soaked for a long time or cooked.
Yoghurt – Use natural yoghurt, Greek yoghurt or if you want a mix of flavours have flavoured yoghurt. You are also welcome to use milk.
Nuts – Add chopped nuts such as walnuts, pecans, almonds or pistachios. You may also add sunflower seeds, pumpkin seeds or chia seeds. But if you wish to add chia seeds add more yoghurt or milk or chia seeds that have already been soaked so, that the pudding is not dry.
Suggested toppings: Top with chopped fruit, why not opt for seasonal fruit like summer berries, apples, apricot, pears, banana or any fruit of choice.
Stir in nut butter and or drizzle with chocolate or toffee sauce. Add cinnamon, vanilla extract, nutmeg, cardamom, or ginger to boost the flavour.
How to make banana oatmeal pudding
In a bowl, place the banana and oatmeal. Mash the banana and mix the oats with it. Add yoghurt a tablespoon at a time to gauge the consistency. Once the desired consistency is reached stir in the nuts. Divide into two bowls and top with the fruit of choice. Serve and enjoy.
Storage
It would be ideal to consume the pudding on the same day as the bananas will oxidize. If you plan to make it ahead, mix the oats and yoghurt and keep in the fridge then add the mashed banana and nuts before serving.
