Broccoli and carrots pasta is super easy to make, filling and tasty. Get ready to make a super easy pasta dish. Fusilli cooked Al dente, blanched broccoli and carrots, drizzled with olive oil, topped with grated parmesan and freshly cracked black pepper. Mix all the ingredients gently and enjoy.

This simple dish is a keeper for whenever you need a quick, tasty salad to serve as a side dish, bring to a potluck, have for lunch, a picnic winner and as an after-school snack.

My daughter asks for vegetables and pasta for after school. Well, she makes life easy by asking for both because we always have vegetables and most days have pasta at home. Most days she has sports training after school so, I try to give her something filling like pasta salad, fruit and a kind of protein depending on what is available at home.

When days are warmer this pasta dish is perfect as a cold salad. Comes colder days this is served warm which is still delicious. Serve with steamed, fried or grilled meat like chicken or pork, sausages or tofu this becomes a complete meal.

Broccoli and carrots pasta ingredients

Here are the simple ingredients to make this pasta dish. Feel free to use other pasta shapes, vegetables, cheese and salad dressings that are available on hand.

Fusilli pasta – use any pasta of choice that is you have on hand

Broccoli – substitute with any vegetables available

Carrots – substitute with vegetables on hand

Olive oil

Parmesan cheese – swap with mozzarella or cheddar too

Pepper

Salt – used to season the water to boil the vegetables and pasta in, feel free to add as seasoning as needed

How to make pasta salad

Bring a pot of salted water to a boil. Blanch broccoli and pasta for two minutes. Take the vegetables out and plunge them into a bowl of cold water. Drain the vegetables out of the cold water in a sieve. Set aside while waiting for the pasta to cook.

Using the same water to boil the vegetables, add the pasta and boil until al dente. Drain the pasta and rinse with cold water.

Add the vegetables and pasta to a mixing bowl. Drizzle olive oil, grate parmesan over the top and season with pepper. Toss gently and evenly. Taste the dish and adjust the seasoning as required. Serve straight away or chill for an hour before serving.

How to store pasta salad?

Store this salad in an airtight container in the fridge for up to 3 days.

What is the best pasta to use for broccoli and carrots pasta?

You can use any short and sturdy pasta available such as penne, gemelli or elbow macaroni.

Can I add different vegetables to the recipe?

Feel free to add any vegetables that you want or have on hand. We have used peas, spinach, tomatoes, olives.

Equipment

  • 1 saucepan
  • 1 sieve
  • 1 slotted spoon
  • 1 mixing bowl
  • 1 mixing spoon

Ingredients
  

  • 1 cup fusilli
  • 1/4 cup carrots chopped
  • 1/2 cup broccoli chopped
  • 1/4 cup olive oil
  • 1/4 cup parmesan cheese grated
  • pepper to taste
  • salt to salt the boiling water
  • water for boiling

Instructions
